I have seen some people comment in articles about Florida bagel shops that you can’t make New York bagels in Florida because you can’t use New York water in Florida. One “famed” New York-based bagel shop, H&H Bagels, is doing just that in Florida with great success.
In fact, a Boca Raton location went viral when it opened and had lines out the door. And now, Florida is getting five new locations.
About H&H Bagels In Florida: This chain was founded in New York City in the early 1970s. From the very beginning, the company has used a very involved artisanal water bagel process, which involves proofing, kettle-boiling, a cold-water bath, and, at the very end, bagels that are oven-baked. (The company was even featured on an episode of Seinfeld.)

And even though there are H&H Bagel Florida locations are in the Sunshine State, you are still getting true New York bagels because they are proofed, kettle-boiled, and bathed in New York water, and then flash-frozen before they make their way to Florida locations.
Miami New Times has called the eatery “famed” and noted that the opening of a Boca Raton location caused a viral “frenzy” with lines out the door.

Gavriella had this to say about the Boca location:
“Just as great as H&H in NYC. So excited to get these real bagels in Boca!!!! Super fluffy and the perfect amount of cream cheese…”
Multiple New Florida Locations: In early February of 2025, it was announced that five new locations were planned for Miami, Florida.
The company’s website indicates that new stores are expected in Tampa, Jacksonville, Orlando, Palm Beach Gardens, Delray Beach, Pompano Beach, and Fort Lauderdale.
