Perhaps you
wandered into Adán Faustos mariscos pop-up
when it took over Güero’s verdant back lot three years ago. Or you
sampled the chef’s Norteño-style tacos
on a smoky Montavilla sidewalk in 2022. Or you
saw his ceviche
at The Houston Blacklight last summer.
For his next stop, Fausto is getting a river view. Starting on Friday, June 13, Mariscos con Onda will take over the waterfront-side patio at King Tide Fish & Shell, the Kimpton RiverPlace Hotel restaurant overlooking the Willamette River, three days a week.
The patio ”brought me back to my
Nevør pop-up days
,” Fausto said. “There’s something about being able to see the water that makes such a big difference.”
On the King Tide patio, Fausto and sous chef Ivan Moores will serve fish and shrimp ceviche with habanero, oysters both on the half shell and barbecued with chorizo (one of
Portland’s 10 best dishes last year
), scallop tostadas with morita mayo and Castelvetrano olives and shrimp flautas inspired by the tacos dorados at Mariscos Jaliscos in Los Angeles, not far from where Fausto grew up.
Dishes from Fausto’s first mariscos pop-up on the back lot at Güero.

King Tide food and beverage director Monica Amestoy, who reached out to Fausto about taking over the patio, is working with bartender Tyler Groom on both aguas frescas and summer cocktails including margaritas, a clarified milk punch with hibiscus and a trio of Micheladas: classic, con mariscos and dulce.
For fans of Fausto’s cooking, these pop-ups have become an annual tradition. And it’s also a sign that Portland’s summer pop-up season is about to hit full swing.
Farag’s
, the mezcal and wine pop-up from Güero, will return this weekend at 2821 N.E. Davis St. Former República chef Jose “Lalo” Camarena and partner Kautia Camarena are working to open
Metlapíl
, a residency focused on mariscos and hand-ground masa at 920 N.E. Glisan St. And then there’s Pal’s — not a pop-up, but a
full-time “snack shack” overlooking the Columbia River
, with food, drinks and a kid’s play area from key members of the Suttle Lodge team opening in July.
Mariscos con Onda will take over King Tide Fish & Shell’s back (waterfront-side) patio from 4 to 9 p.m. Thursdays, Fridays and
most
Saturdays at 1510 S. Harbor Way, 503-295-6166, kingtidefishandshell.com
