Portland is full of bars. There are dive bars and fancy bars pretending to be dive bars and hotel bars and vegan bars and bars with patios and bars on nearly any theme you could imagine.
But how does one determine which bar is “best”?
For Esquire, the answer is personal.
“This year, we went to some of our favorite writers and tapped a few of our own staffers with a simple question: Where do you go for a drink when the world’s giving you the blues?,” wrote the magazine as the introduction to
“The Best Bars in America 2025.”
One of the responses? Too Soon at 18 N.E. 28th Ave. in Portland.
Too Soon opened about a year and a half ago in the former home of Nightingale. It’s the brainchild of Nick Flower and Adam Robinson, both veteran bartenders, and features a menu with 1,000 drinks,

But the real secret joy of this bar, or at least one of them, according to San Francisco-based writer Omar Mamoon, comes at last call.
“You’ll be handed a cookie freshly baked by a chef named Bones—it’s his grandmother’s chocolate-chip recipe, you’re told, as you bite into the still-warm treat and order a last round,” Mamoon wrote for Esquire.
Finally, a reason to stay up until 1 a.m.
